InDesign files you can either send the actual InDesign file (use Collect for Output under the File menu), and Photoshop files you can either send as a .psd or .tif. Those are very generic answers though, as it really depends on the situation and what your are printing. PDFs might be the better file format for either, but again, it just depends.
